The different types of meats handpicked from the Blue Crab are distinguished by their color, shape, flavor, and texture.

Available in these presentations:

Jumbo: Whole, round, pillowy, solid piece of white muscle meat picked from the fin muscles, of which there are only two in each crab.

Super Lump: Large firm, whole and broken jumbo white meat pieces that do not grade out as Colossal or Jumbo.

Lump: Blend of medium, firm whole and broken pieces of white lump and white body meat.

Special: Flavorful, white, flaky, fine shredded pieces of body meat from body cavities.

Claw: Pinkish light-brown muscle chunks, sweet but strongest flavor of all crabmeat products.

Background:

Callinectes sapidus, the blue crab, Atlantic blue crab, or regionally as the Chesapeake blue crab, is a species of crab native to the waters of the western Atlantic Ocean and the Gulf of Mexico, and introduced internationally.
